My first run-in with euglena was at the hotel I stayed at on Ishigaki, the southern Okinawan island. They served euglena biscuits, and that small detail hooked me — I couldn't stop wondering what this stuff actually was. So later, when I spotted a bag of euglena powder for sale, I grabbed it, already curious. The more I dug in, the stranger it got: it turns out to be one of the most over-qualified things I've ever eaten.
The hook was the package itself: printed right on it is a recipe that tells you to stir the powder into yogurt. That's it — euglena and yogurt. So I brought the powder home and ran with the idea. The result is a yogo parfait: yogurt plus euglena as the base, and then whatever toppings you feel like layering on top.
Two things make this work: yogo (yogurt) and euglena powder whisked together until the base turns a vibrant green. Everything else is optional — a drizzle of sweetness, some bright fruit, a bit of crunch. Five minutes, no cooking, and you can riff on the toppings however you want.

Make the base. Whisk the euglena powder into the yogurt until it's a uniform green with no grey-green streaks at the bottom. That's the whole parfait if you want it to be.
Add the toppings. Layer or pile on whatever you've got — a drizzle of honey or maple to cut the grassy, matcha-like bitterness, a handful of berries for brightness, granola or almonds for crunch. No fixed order, no fixed amounts. Improvise.
Between the yogurt's live cultures and the paramylon fiber from the euglena, it's a good thing to be feeding your gut first thing in the morning.
What euglena actually is
Euglena — ミドリムシ in Japanese, literally "green bug" — is a single-celled, flagellate eukaryote. That sounds dry until you get to the punchline: nobody could decide whether it was a plant or an animal, because it behaves like both.
It photosynthesizes. It carries chlorophyll a and b in its chloroplasts and makes its own food from sunlight, exactly like a plant. But it also moves — it has a long whip-like flagellum it uses to swim toward light, and when there's no light around, it can switch modes entirely and feed on organic matter from its surroundings, like an animal. Biologists call this trait mixotrophy: it runs on sunlight or on food, depending on what's available.
This dual nature genuinely broke 19th-century biology. Euglena had both plant and animal characteristics and fit neatly into neither kingdom, which is part of why Ernst Haeckel proposed an entirely new kingdom — Protista — to hold organisms like it. It's a single cell that refuses to pick a side.

A few more details that make it weird in the best way:
- It has a red eyespot made of carotenoid pigment that filters light onto a light-sensitive structure at the base of its flagellum, letting it steer toward the brightest spot. A single cell, with something close to a primitive eye.
- Its flagellum is covered in roughly 30,000 fine filaments called mastigonemes.
- Its chloroplasts are wrapped in three membranes instead of the usual two, a fingerprint of secondary endosymbiosis — meaning euglena didn't inherit photosynthesis directly, it essentially swallowed a green alga long ago and kept it.
- Instead of storing energy as ordinary starch, it makes paramylon, a β-1,3-glucan. That's a type of beta-glucan, the same family of fiber that shows up in oats and mushrooms and gets studied for immune and metabolic effects. Euglena is unusual in making it as its main energy reserve.
The micronutrient pitch
Here's where Japan got interested. According to Wikipedia, powdered euglena "contains minerals, vitamins and docosahexaenoic acid" — DHA, the omega-3 fatty acid you usually associate with fish oil. So in one microscopic organism you get plant-style vitamins and minerals and an animal-style omega-3, which lines up with its part-plant, part-animal biology. The taste of the raw powder, fittingly, is described as dried sardine flakes.
That breadth is the whole reason it's sold as a superfood here. A single cell that photosynthesizes like a plant and feeds like an animal ends up carrying a little of everything — vitamins, minerals, fatty acids — which is a genuinely unusual nutritional spread for one ingredient.
A note on the hype, because euglena marketing runs hot: you'll see claims that it contains "59 nutrients." That figure comes from companies selling the stuff, not from the encyclopedic record, so I'm not going to repeat it as fact. What's solidly established is the categories — minerals, vitamins, the omega-3 DHA, and paramylon — not a tidy headline number. The honest version is still impressive without the marketing gloss.
There's a real industry behind it, too. Euglena Co. in Japan farms the organism at scale; it even opened a Yokohama refinery in 2018 that turns euglena's lipids into biodiesel and biojet fuel. The same cell that gets dried into a powder you stir into yogurt is also being burned in engines. Finding it bagged on a shelf on Ishigaki, with a yogurt recipe on the back, felt like the most domestic possible endpoint for all that.
Why yogurt
The package answered that for me before I could ask. "Superfood algae" usually shows up as a powder you choke down or a murky green drink. The euglena bag skips the lecture and just prints a yogurt recipe on the side — stir it in, eat it for breakfast. It's a much friendlier delivery system than a shot of green sludge, and it's what gave me the parfait in the first place.
