A simple pot of rice with a little swagger. Garlic gives it depth, cilantro makes it feel alive, and the lime wakes everything up at the end. This goes especially hard with skewered shrimp, black beans, or basically anything happening on taco night.
Ingredients
- 1 cup white rice
- 2 cups water
- 4 big garlic cloves, minced
- 1 tsp kosher salt, plus more to taste
- 1 tbsp butter or olive oil (optional)
- 1 whole bunch cilantro, chopped
- Juice of 1 lime, plus more to taste
Cook the rice the normal way with water, salt, and garlic. If you want a slightly richer version, sauté the garlic in a little butter or olive oil first. If not, straight into the pot is fine.
While the rice cooks, pick the cilantro, rinse it well, and dry it before chopping. Use a lot. Not a garnish amount. This is cilantro lime rice, not rice with a few green specks in it.
When the rice is done, fluff it first. Then add the lime juice, chopped cilantro, and a final pinch of salt. Taste and adjust.
